Homemade Popsicles
As we face another week at home, I thought it would be nice to reflect on the positive things from our quarantine days. I wanted to share with you a few spots at #casacancado that are making us happy right now and why. And I am challenging you to think of some places in your home that have been working for you and your family during these times and share them with me here as well.
first place: THE KITCHEN
why: HOMEMADE POPSICLES
Making homemade popsicles is one thing that is making us happy over here at #casacancado. We have been spending an abundance of time in the kitchen, and while sometimes it feels overwhelming to be cooking a gazillion times during the same day, there is also great baking, snacking, and gatherings happening over here. After a couple of failed attempts, we’ve now figured out the perfect recipe for this delicious and pretty Simply Strawberry pop.
SIMPLY STRAWBERRY POPS
what you need:
2 cups of fresh or frozen strawberries
2 Tbsp lemon juice
1/2 cup of sugar
how to make:
– in a pot boil 1/2 cup of water with 1/2 of sugar and save the syrup
– wait for syrup to cool off then combine strawberries, lemon juice, and syrup in a blender until smooth
– pour into molds
– insert sticks and freeze for about 5 hours
I am curious, what have you been cooking, baking, and snacking? How is your kitchen bringing you joy?
